Cloud Eggs


Here’s how to make them:

  • Separate the egg yolk from the egg white
  • Beat the egg white until it turns into a fluffy meringue (save the yolk for later)
  • Place the meringue on a tray with a baking sheet and carve out a small hole in the middle of it
  • Bake the meringue at 450 degrees Fahrenheit for 4-5 minutes
  • Place the egg yolk in the small hole you created in the meringue and bake for an additional two minutes

Add toppings to the egg whites, like cheese,ham and parsley.  Serve on plate of veggies, etc.

Mug Scrambled Eggs



1 egg

3 egg whites

2 tablespoons salsa or bruschetta


Mist an oversized mug with nonstick cooking spray, add the egg and egg whites and whisk. Add salsa and whisk again.

Microwave for 45 seconds, remove and stir it all up. Microwave for another 45 seconds, remove and stir it all up. Microwave one last time for 45 seconds and it’s ready to enjoy.

Top with optional seasonings, like ground black pepper, fresh chives, thyme or additional salsa. Grab a fork and dig in.

Cookie in a Cup



1 tbsp. butter, melted

1 tbsp. white sugar

1 tbsp. brown sugar

3 drops of vanilla

pinch of salt

1 egg yolk

1/4 cup flour

2 tbsp. chocolate chips


Microwave 40-60 seconds in a cup or a small bowl.

You’ll have a single serving of a deep dish chocolate chip cookie.

1-Minute Chocolate Chip Cookie in a Mug



1 Tablespoon unsalted butter

1 Tablespoon granulated sugar

1 Tablespoon brown sugar, firmly packed

1/2 teaspoon vanilla extract

1/8 teaspoon (pinch) salt

1 egg yolk

3 Tablespoons all-purpose flour

1-2 Tablespoons chocolate chips


Microwave butter in a mug until melted, 30 seconds to 1 minute. With a spoon, mix in sugars, vanilla extract and salt until well-combined. Mix in egg yolk until no traces of the yolk are seen. Mix in flour. Fold in chocolate chips.

Microwave on high for 40 seconds, or a maximum of 50 seconds. Serve warm (maybe even with a dollop of ice cream).

Coffee Cup Molten Chocolate Cake


Makes 2 servings


4 tablespoons unsalted butter
1 ounce bittersweet chocolate, chopped, plus 1 ounce broken into 4 equal pieces
1/4 cup (1 3/4 ounces) sugar
2 large eggs
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup (1 1/4 ounces) all-purpose flour
1/2 teaspoon baking powder


Microwave butter and chopped chocolate in large bowl, stirring often, until melted, about 1 minute. Whisk sugar, eggs, cocoa, vanilla, and salt into chocolate mixture until smooth. In separate bowl, combine flour and baking powder. Whisk flour mixture into chocolate mixture until combined. Divide batter evenly between 2 (11-ounce) coffee mugs.

Place mugs on opposite sides of microwave turntable. Microwave at 50 percent power for 45 seconds. Stir batter and microwave at 50 percent power for 45 seconds (batter will rise to just below rim of mug). Press 2 chocolate pieces into center of each cake until chocolate is flush with top of cake. Microwave at 50 percent power for 35 seconds (cake should be slightly wet around edges of mug and somewhat drier toward center). Let cakes rest for 2 minutes. Serve.

One Minute Peanut Butter Cake



1 egg, beaten

1 tablespoon brown sugar

1/2 teaspoon baking powder

1 heaping tablespoon flour

2 tablespoons peanut butter

1 teaspoon milk

1 tablespoon powdered sugar


Throw in chocolate chips, peanuts, etc.


In a small bowl, whisk together egg, brown sugar, baking powder, peanut butter and flour.

Pour batter into a greased ramekin. Microwave for 30 seconds.

While the cake is microwaving, stir together milk and powdered sugar, adding more powdered sugar if necessary to thicken frosting.

Remove cake from ramekin, and pour frosting over top.

Nutella Mug Cake



4 tablespoons self rising flour
4 tablespoons white granulated sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella
3 tablespoons milk
3 tablespoons olive or vegetable oil


Combine all ingredients in a large coffee mug. Whisk well with a fork until smooth. Microwave on high for 1 1/2 – 3 minutes.

Top with whipped cream and chocolate syrup. Enjoy!

Note:  Cooking time depends on the wattage of your microwave.

Perfect Single Serving Chocolate Chip Cookies


Makes two large chocolate chip cookies.


2 tablespoons of butter

2 firmly packed tablespoons of dark brown sugar

1 tablespoon of granulated sugar

Pinch of kosher salt

1/4 teaspoon of pure vanilla extract

1 egg yolk – discard or set aside egg white for a different use

1/4 teaspoon of baking soda

1/4 cup of all-purpose flour

3 heaping tablespoons of semisweet chocolate chips


Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a microwave safe bowl, heat butter just until it starts to melt and is softened. Blend softened butter, sugars, salt, and vanilla together by hand. Add egg yolk and stir again. Add baking soda and flour and stir until combined. Then stir in chocolate chips.

Form cookie dough into two balls and place on baking sheet. The cookies will spread during baking, so make sure they are several inches apart. Bake for about 8 minutes, or until edges are golden brown.

Remove baking sheet from oven and give the baking sheet a firm, but careful bang on the counter top. This will deflate the cookie and give it a perfect wrinkly appearance.

Coffee Cup Upside-Down Cake

2 tablespoons butter

3 tablespoons dark brown sugar

½ apple, thinly sliced, slices cut in half

½ egg

2 tablespoons milk

Vanilla (a few drops)

¼ cup self-rising flour

2 pinches cinnamon


Put 1 tablespoon butter, 2 tablespoons brown sugar and the apple slices in the bottom of a coffee cup; microwave, 1 minute. Soften remaining butter; mix in a measuring cup with remaining sugar until creamy. Add egg, milk and vanilla; beat with a fork to combine. Add flour and cinnamon; beat until smooth. Swirl coffee cup to coat apples completely with melted sugar and butter; sprinkle with a pinch of cinnamon. Pour batter into cup, swirl once. Microwave 1 minute.

Emergency Brownies

Emergency Brownie in a cup





Vanilla Extract

Cocoa powder



Nuts (optional)


Put a tablespoon of butter into a coffee mug.

Microwave until the butter is melted.

Then add two tablespoons of water, a good pinch of salt, and a drizzle of vanilla extract (about 1/4 tsp). Stir in two tablespoons of cocoa powder, three tablespoons of sugar, and three tablespoons of flour. Mix well and then microwave for one minute, or until it looks dry on top. Toss a few nut pieces on top.
